First, it's dried natural, meaning only the outer skin is removed and the grape like, fruity outer bean is left. The juices from the outer bean soak into the inner bean while it dries, creating an amazingly rich and fruity profile.
After that, it's sorted by hand, by artisans, to ensure only the best beans make it to roasting.
